Secrets about Raw Food, Longevity and Creative Lifestyle!

HOW TO START THE FAMOUS ‘RAW’ DIET?

Lately, I received many emails asking me how I started my RAW trip and what suggestions would I give to people who want to begin, but don’t know how.

First of all, raw trip is your personal trip. You can start exactly same way as one of your friends and apply his tactics. Bare in mind though that some time after the beginning, while you are already feeling like you GOT IT, your tactic might be very different than other’s.

I would say there are some general helpful tips and everyone can benefit from them.

My story was a story of a vegan girl who switched to raw lifestyle basically overnight. But can I actually call it “overnight switch” remembering that I was reading days and nights about RAW before I made my first smoothie ?

So, there goes your first tip:

# 1 . Educate yourself.

  • go to forums and read peoples posts about raw. Post your own questions.
  • buy or borrow few raw food books that have some description of what raw really consists of and at least 10 recipes.
  • if you live in a bigger city, find a community that already organizes potlucks and raw meetings. Place your own add in health food stores about looking for other raw food lovers.
  • if you live in small town, you can still create your own community starting with your best friend. Try to talk about your raw plans only with those fellows that you can trust and from whom you can get some kind of support.
  • watch movies that relate to healthy foods and raw lifestyle
  • explore online blogs about raw

Once you have gathered pieces of priceless knowledge and once you got an insight on how others went raw, you need to decide how much raw you want to be.

#2. Decide about so-called ‘ percentage ‘ of your raw beginning.

Many people went raw overnight and many of them slip right back to kentucky fried chicken! Well, that’s a joke ;-) , but so many people went right back to bread and maybe even pastas , because the trial was too drastic. And by the way, kentucky fried chicken is not in capitals on purpose!

It is up to you to set a deal with yourself. Ask : why do you want to try raw and what you can get from it ?

It is up to you what ‘raw’ really means. We all should feel easy and happy with our choices, but also, please, be honest with yourself. Thinking that one cupcake a day is not a big issue just because you feel like it, gives your addictions too much of a strength.

‘How much raw’ really describes how many cooked meals you are going to keep in your diet. We still are devoted to healthy, organic or even wild food choices and most of us decided on raw VEGAN diet.

#3. Decide about the time frame of raw diet.

Many people feel that setting up a goal that needs to be accomplished by certain date gives them more power to focus on fulfilling that promise.

Are you going to try 100% raw ( simply meaning : no cooked food at all ) for 2 weeks or a month ?

That is how your question can look like. You just need to decide if you are going to set up a final date of your raw experiment or not and see what will happen. Maybe you will actually fall in love with raw food diet and upgrade it to a raw food lifestyle;-)!

#5. Buy nice, inspiring notebook and set an intention.

It is up to you how long you want to go raw and how raw you want to be. But seeing these commitments on the pages of your journal feels like you are actually having a conversation. Especially if there is  nobody who supports your raw dream. Make your goal as clear as it can be. Devote one or more pages for only description about how long and how raw you are going to be. Write it in big letters , keep it organize and clear, like you would make an advertisment. On different pages describe your excitement ( I am sure you are excited! ) and your fears. This will help you later to face the moments of doubts.

#6. Decide if you can get rid of everything that contradicts with raw food diet.

Before I started my journey, I either gave away or threw away every nasty can of sauce or whatever I found disturbing in my fridge. I gave away grains that I didn’t want to eat, I also made a revolution in my bathroom and make-up supplies . If you are not ready for this big step – at least go through your fridge. Bare in mind that fridge will be your girlfriend or boyfriend since now on. You might have to deal with your cravings and mood swings. Somehow, unconsciously your body will lead you to the fridge door. Be sure then that once you open them you can find only the purest foods that are raw related.

#7. Decide if you should talk about your raw trip with others.

Some of us work better once we spread the word about what we are going to accomplish. These people feel like they made a bigger, social commitment; it is no more their own silent goal.

If you are one of them – fine. Make sure though, that you are strong enough, stronger than a goal itself , because people will judge. PEOPLE WILL JUDGE.

AGAIN : PEOPLE WILL JUDGE.

And they do judge usually when they deal with things they don’t know anything about. That is why their first question of all times is : Where do you get your protein from? Geeeeeeeeeeeeeeee… ;-) Also, if you don’t care that they will attack you or ask questions that they don’t expect to be even answered , decide if you have an actual answer.

Otherwise, keep your raw trip for yourself, nourish this secret and think of some practical answers while in public places like restaurants. This way, if you succeed – yell ! and teach others how to go raw! If you fail ( only regarding what goals did you set up for yourself ) – nobody will bother you.

#8. Decide how to act in public places.

Are you ready enough to go to your favorite restaurant with your favorite friends where they serve your favorite before-raw meals ?

If not, because you know you might have this lasagna, stay at home and make a giant green smoothie!

If you are ready to go out, bring with you something that you looovvvee  and add to the dish you’ve ordered – avocado? olives? sun-dried tomato ? This way you are not a passive client of  a restaurant who will eat the less popular dish, but you are actively setting up your raw food mindset again.

#9. Search for local food.

Local food means usually less expensive. If you live in colder climate, try to start your raw journey some time closer to the spring. It is not necessary, but will help you to find green foods easier and at lower prices.

#10. Always, always, always have something prepared in your fridge.

For example, you can premix your greens in one container. Than once you are hungry, you will not be discouraged by chopping and chopping.

Or – make a nice raw dessert that is not too heavy, but can serve as a snack.

It is a good idea to make several dishes twice a week. For example choose your less busy days for food preparation. Make three, four dishes and let them wait in a fridge for a time when you can truly embrace them.

And, especially at the beginning, use greens as a resolution to most of your abstract cravings. They really have a power!

#11. Food is not everything. Find other healthy obsessions !

It seems like even healthy raw foodists have their own obsessions with food. It could be some kind of superfood or usually desserts.

Why not shift the attention to something totally different?

I was painting like crazy the first year of my raw trip! I knew I had to eat and because I can get lost in colors and paper,  I needed to set up an alarm clock to not miss my nourishment.

Is there anything you love to do but you have never truly explored ?

Exercise would be a great switch from focusing on food.

Remember, raw food is not only about going raw vegan. It is more a whole body-mind work with attachments and habits that were never useful anyways.

KALE CHIPS AND HOW TO TAME YOURSELF.

I have some issues with dehydrators.

I believe that this type of food preparation might let these suppressed ‘ugly betties’ come to the surface.

Imagine – as a human being ( and I am sorry, but we all are attached to something ) – you want your dream snack right here, right now. At this point we don’t care if the message about your wants comes from the brain, from your belly or from your empty emotions. You are feeling good , because the thing you are desiring is not processed chocolate or some gluey suicide pudding.

All you want to enjoy is this famous KALE CHIP!

So, you grab my recipe ;-) , that does not have measurements, because it is time to start using our own eyes and intuition to determine how it all should look like. And imagine your own inventions once YOU, my green rockin’ friend have to figure out the amounts!

HERE IT IS :

INGREDIENTS : ( free your hands and eyes, please )

  • one bunch of fresh basil
  • app. 1/2 cup of pine nuts
  • olive oil
  • soaked dried tomato ( reserve the water )
  • nutritional yeast
  • app. 1 Tsp of miso ( I use chickpea miso )
  • turmeric
  • ground black pepper
  • celtic sea salt
  • rosemary
  • your tomato water

The idea is to have a pretty nice flowing consistency.

Dip your kale pieces in pesto, massage and put on dehydration trays. My kale chips usually need between 6-8 hours of dehydration time.

And now the torture begins.

If you are at home, you are probably checking your kale chips every hour, half an hour..your hope is that maybe you can find one that is ready! But it is not. It needs this 8 hours to fulfill your dreams.

Sometimes this feelings reminds me of my chocolate ( magnesium ) cravings during or before my moon-girl days . I can see a resemblance this dorky TV spot about some insurance when people are yelling from their windows :

” It’s my kale chips and I need it NOW ! “

Well, sisters and brothers, dehydrator teaches us something.

The message it carries for us is : If you have taken this raw /life food nutrition trip already, you need to know your weak spots and work on them. Either prepare your kale chips the day before, BUY some for snacking here: Kale Chips (Habanero Ranch), 3.5oz or learn how to wait to get it finally and fully enjoy them. Or, simply, go for a long long walk!

p.s. I am writing this post in a public place. So, the guy comes in and the person behind the counter asks politely : ‘How are you ?’. The guy answers : ‘ Living The Dream ! ‘. Cool, huh ? ;-)

Kale Chips (Habanero Ranch), 3.5oz

RAW FOOD AND MAYO?

When I was not raw, I always loved to put mayo on top of lettuce or radishes.

I miss it too much to stay away from this wonderful spread!

Ingredients :

  • 1 cup of olive oil or avocado oil
  • 2.5 Tsp of Miso of your choice
  • 1.5 lemon – juice
  • 4 dates
  • pinch of cayenne pepper

Blend everything in your blender or use food processor.

It will make 2 cups of mayo and will keep in a fridge for quite a few days.

You can modify the MAYO by adding POPPY SEEDS !

VOILA! And enjoy!

The risks of internet freedom is obvious.
Anyone can say whatever they want using the anonymous nickname.

I am a proud member of Give It To me Raw – raw community of people who love raw, who love to help others and love to inspire others.
I am even a featured member of GTMR, which I am very proud of and consider as a great gift. Thank You, Dhrumil again!

The place is awesome to just hang out, but above that one can learn a lot about raw food lifestyle.
Unfortunately, there are some people, whose goal is to accomplish small emotional storm among us.
That is why the way that GTMR operates, needs to be changed!

HEIDI’s SMILE PROJECT

It is almost impossible that there is somebody out there who have not came across RawFoodRightNow.

If you are the one who does not know Heidi and Jason, this blank page in your life has to change immediately!

These two generous people are the root of the raw food community. Since I am blogging ( here, on my old rawvolta wordpress website or YouTube channel ) I am a fan, a sister, a regular visitor of their website. Heidi and Jason are spending lots and lots of time entertaining us, teaching us about raw food lifestyle and they do it for free. For Free!

We don’t know if they have other jobs and they write their blog articles, make raw food videos between jobs, in the night, when they have some spare time or early in the morning. And we don’t need to ask any questions.

What  we know is that they care.

We know they are there for us, raw food freaks! ;-)

Now , it is  time to give back some love, Sisters and Brothers!

Heidi is in need and we need to help.

They have incredible ebooks and they created a donate button, that you can use.

Yes, I did donate. I feel like there is no way I could just forget about her problems and walk away.

WHO IS SCARED OF ‘ THE DOCTORS ‘ SHOW ?!

I am. I must say in a certain sense, I am.
I also laugh while watching, because it feels like  the program presents knowledge from some type of ignorant medical hand outs.

The show runs five times a week for approximately an hour.
It presents 4 doctors that specialize in different medical fields and their advise or orders are related to the field they are presenting.
The four doctors are dressed up in white coats to give us a feeling of professional help.

IS THAT SO?

I watched the program three times so far, and telling the truth the show is very entertaining, in some way. It is same kind of laugh that I express while watching ‘Hidden Camera’.

We usually have a lunch/smoothie/salad break at time of the show and my husband and me have been watching the program together twice and, I am telling you, we laugh!
Of course, watching Monty Python is very entertaining as well, but the difference between Doctor’s and Python is the second one is funny by intention, but the first one presents
frightening level of quality, that makes us laugh with a sarcasm.

IS THE SHOW HEALTH AND WELLNESS RELATED ?

The show is interactive.
We see the public at the studio and ‘patients’ or people with some health problems that call the doctors from their homes and then show up at the show to fix their issues in public.

After yesterday show, I got a feeling that some people have enormous desire to be a tv star.
How otherwise would you want to be on the public eye with such a weird question as : will the coffee shrink my wife’s breasts?! It has to be a despair..

I would say some topics might be considered as health related.
But the question is :

DO THE DOCTOR’S ANSWERS AND ORDERS HAVE AN INTENTION TO REALLY HELP OR JUST PROVIDE A QUICK FIX?

The solutions I have heard so far were :

  • for excessive sweating – botox applied under the arm pits
  • for getting a fit look – liposuction
  • for wrinkles – botox
  • advise on which burger is better regarding fat/ sodium/ calories ( Mc’Donalds or some Abby’s crap )
  • organic food vs commercial : organic maybe for babies and young people ( meaning if you are over 30 – nobody cares what you eat, you’ll be on drugs anyways )
  • to save few cents – green bell pepper over red or yellow ( meaning you are getting less –> unripe green  fruit) . The doctor literally took the yellow and red bell pepper out of the peoples hands and gave them green, unripe, more acidic, less nutritious green one !
  • you can drink your coffee and if your breast shrunken, one of the doctors who is plastic surgeon can gladly fix them for you!
  • the doctor’s advise on fast food : ” If you go to fast food store, that’s ok. Everyone does it. But make sure to make better choices.”

My point on this one is :

- It is not ok to go to fast food stores
- It is not ok to say such  thing in public as a doctor
- not everyone goes to fast foods and I know many people , including me, that did not go there even once!
- you can not make better choices at the place of dead flesh, toxins and terrible addictions

The preview of the show ( you can check it HERE ) gives a feeling that we will be watching some kind of violence related show. Police reports of latest murders or some devastating political news.
I would expect some nice calming, ‘green’ style of the show and a tv ad’s, but I am sure that it is not the intention of a program that wants to raise a fear to sell some products, brands or botox treatments.

At the beginning I said that I am scared of ” The Doctor’s’ show.
With full responsibility I can say that ‘ The Doctors ‘show can not have any impact on mine health/nutrition/wellness choices. But it can on others.

I am not a doctor.

All the doctors from the show have their MDs ( MEDICAL DISINFORMATION stamp ? ).
The difference between us is obvious : I don’t watch for FDAs approvals of whatever but I do listen to my healthy, wise, alert body’s approval and intuition.

And I try to gain knowledge beyond the boring, thousand time discussed topic of a fish oil and mercury.

I see the danger in this show. A big one.

People seek for health advise and all they get is another drug prescription, liposuction, quick  ‘outside’ fix. And most of them will do whatever Mr. MD will say.
There is no talk about prevention, nutrition whatsoever.

Watching this clip-like show that jumps from one topic to the other gives more misinformation than it should be allowed.
People don’t know how to deal with their bodies and will swallow doctor’s order without questioning.
And because the doctors know that this dependency on somebody’s advise exists, they use it.

Instead of educating people how to take care of the body and how to TAKE THE HEALTH INTO PEOPLES OWN HANDS,  they manipulate and sell.

One thing I appreciate is that the doctors of the show are not overweight. Like Mr. Health and Weight Advisor – Atkins.

WHAT IS WATER FAST AND HOW TO DO IT ?

Socrates called a ‘unconscious’ those who ate more than 2 meals a day, and the father of medicine, Hippocrates, wrote:

“… if the body is not cleaned, then the more you feed them, the more it will harm …”

During the tightening of the disease, in order to relieve the body and to direct the forces of life to the fight against the disease, recommended dispensing with the adoption of food in general.

Similarly thought the other famous doctors of antiquity – Avicenna, Asclepiades , Celsus, who recommended their patients long  3 – 5 weeks water fasts in order to regain strength and health.
During the Middle Ages, another famous doctor, chemist and philosopher, Paracelsus, pioneer of medicine relying on observation and experiment, claimed that fasting is the best remedy for many diseases.

Still, some people love it, some people say it is not really the best way to cleanse and they claim that being only on water might be dangerous in some cases.

I remember David Wolfe saying that water fast is an incredible way of cleansing , but it is not  for everyone. Some people are already very deficient in minerals and water fast might additionally flush all the remaining nutrients.

Regardless of what other people say, I have a big crush on water fasts.

MY HISTORY OF WATER FASTS

When I was in my teens I was doing 24 or 36 hours water fasts every week. I chose Saturdays for my fasting days, because I knew that no work, no school provide me a peaceful environment and I could be as much active as I can or take a nap if I wish.

My goal was also fasting three days in a row every month.
For example you can choose that every first three days of every month you do a water fasts.

I accomplished few of those fasts, but it did not stay with me, unfortunately.
In 2006 I did my 8 day water fast,learned a lot from this experience and gained a lot.

PAUL BRAGG

Just recently I’ve read Bragg’s ” The miracle of fasting ” – amazing book on water fast.

Paul Bragg is known as a life extension specialist, American pioneer on water fasting and the Bragg’s Liquid Aminos guy.
Let’s take a closer look at what  water fast is, why to fast, how long to fast and what water fast can do for us.

WHAT IS WATER FAST

Treatment using the full water fast means complete, periodic resigned from all kinds of food  regardless of its form, whether it be food on the consistency of a solid, or juices and drinks – in order to switch on the body’s internal regime nutrition, during which the body uses its own reserves of  fatty substances.  At the time of supplying energy in the body from the inside, the body, in order to maintain a constant level of homeostasis, or internal environmental conditions, begins to search for reserves.

What happens is the dissolution (absorption) and utilization of deposits from fat stocks, affected blood vessels, inflamed cells, protein deposits, tumors, scarring and mucus in bronchi. Above that the  ‘consumption’  of pathogenic micro-organisms – bacteria, viruses , funguses, mykoplazm takes place, which leads to recognizing and removing of latent internal outbreaks of infection, removing the ‘root of the disease’.

The process of getting rid of harmful substances – foreign origin, allergens, radioactive radicals starts. All of this serves to maintain life in the body. Therefore, the consumption of a minimum quantity of food or juice during the healing time will shift the body from the regime of internal nutrition to the normal, outside regime of nutrition and thus break the course medicinal water fasting. If you want to continue treatment after some time, everything should start from the beginning. Water fast usually lasts for set time of period and might include the proper use of aquatic regime ( saunas, swimming, sweating ), a regime of active movement, the use of massage and purification enema or breathing system.
Regular water fasts lead to recovery, reconstruction immune system, the overall renewalPaul Bragg and many other famous water fastitians state that fasting gives the additional kick to your active life and longevity.

INDICATIONS

1. Overweight and fatness.
2. Cardio-vascular disease: Atherosclerosis, hypertension, coronary artery disease, the pre-and after strokes,  inflammation of the inner lining of arteries, migraine, hemorrhoids and others.
3. Almost all the chronic diseases of the digestive tract: catarrh of stomach ulcers, chronic liver disease and gall bladder, viral inflammation of the liver, pancreas, diabetes (in the form of insulin dependence) and others.
4. Respiratory Diseases: bronchitis,pneumonia, inflammation of the pleura, forms of tuberculosis, asthma and other bronchiale.
5. Diseases of the urinary tract:  inflammation of the kidneys, kidney inflammation clusters, abnormal ovaries and the menstrual cycle, chronic inflammatory processes caused by the uterus (ovaries), diseases of the thorax, infertility, early pregnancy poisoning, the prostate gland adenoma , Congestive heart inflammation of the prostate gland, impotence.
6. Nerve disease: neurosis, neurasthenia, insomnia, paranoia, epilepsy, schizophrenia, Parkinson’s disease, others.
7. Disorders of the immune system: allergic conditions, eczema, psoriasis
8.Tobacco dependence, alcoholism, drug addiction.

CONTRAINDICATIONS

1. The first half of pregnancy.
2. Lactation.
3. Advanced tuberculosis, malignant tumors and malignant diseases of blood spilled disorders, diseases psycho-neurological  – all form of  immobilisation of the patient with dementia or mental diseases.
4. Endocrine, nutritional extensive process of internal organs (abscess, depravity and some others).

HOW LONG TO FAST

1. Short (1 – 20 days)
2. medium (21-40 days)
3. Long (41-60 days)
4. very long (61-80 days)
5. extremely long  (81-180 days).

Usually if one wants to do a fast by himself – the fast should not go beyond 40 days, and still it is not recommended for everyone.

What Paul Bragg suggests and what I find the most reasonable is the plan of water fast that incorporates all of the below ones :

  • 24 or 36 hour water fast every week ( one starts after a breakfast that consists of a fruit or juice. Or one can start after a dinner that consists of salad or nurishing soup )
  • every first 3 days of each month ( that is my personal piece of plan )
  • 7 to 10 days every 3 months

If you look closer, it all adds up to approximately :

- 48 days ( 24 h every week )
- 36 days ( 3 days each month )
- 21 to 30 days ( 7 or 10 days every 3 months )

105 – 114 days of water fast a year!

- your digestive track can rest for third of a year
- you are cleansing for a third of a year
- you are saving the third of the money that would be spend on food ;-)

I believe that this plan of setting up a water fast can do no harm.
If you incorporate some enemas into fasting, it can help in releasing the toxins.

After my 8 day water fast I lost :

- 8 pounds
- I saw strange mucus fibers after my enemas, which I am assuming was a residue of some old dairy products and starches
- I sweat a lot after the fast by attending 3 day yoga retreat
- my skin looked amazing!

There is few things that one needs to consider before going into water fast.

PREPARATION TIME

The diet before water fast ( and as a super raw foodie at every point in my life! ) has to be full of nutrients and light. Before the 3 days and 7/10 days water fast you should have a juice ( vegetable plus fruits ) every day, so you make sure that you are getting plenty of nutrients. You should obstain from meat products if you can.

DURING THE FAST

Specially during the longer time of fasting you should spend your time in peace. Reserve for yourself some resting time, so nobody can bother you!

AFTER THE FAST

Specially after longer fasts the coming out of the fast should be at least of the same length as a fast if not longer. It should be break down with juice and after few days one can introduce some soft fruit and vegetable.

The last but not least, fasting is very personal thing.
I would be sure to not talk about this special time to anyone, so people would not bother you with all sort of questions or their considerations.

KOMBUCHA TEA – HOW TO MAKE AND WHY TO LOVE IT.

WHAT IS KOMBUCHA ?

Kombucha is a living drink which helps stimulate the metabolism and maintain a healthy immune system.

Kombucha has become pretty famous recently for its ability to increase the effectiveness of natural detoxification processes and replenish vital organic acids and enzymes that are required by the body for optimal health.

The Kombucha mushroom looks like a beige pancake and should be stored in cool, dry, dark place. The culture is placed in  herbal  tea, that has been sweatened with honey for exam and turple. The purpose of it is to grow organic acids, vitamins,

HOW TO MAKE KOMBUCHA TEA :

Kombucha Tea is made by combining the culture with a mixture of tea and sugar.The ingredients are allowed to “ferment”, usually from 7-10 days or more.

Kombucha can be made safely by everyone, at  house for pennies. Please, read the tips below to ensure that the Kombucha you make is safe, healthy, and effective.

THREE MAIN INGREDIENTS :

TEA :

Kombucha requires tea for its fermentation. By using organic tea – black, oolong, green or white tea you won’t  affect the culture, or damage the helpfull bacteria. Also teas with flavors or additinal oils can kil the good bacteria, so I recommend the regular, black organic tea, that has the highest content of Lactic Acid and Gluconic Acid. Avoid decaffeinated teas, since they were treated with harmful process

Green tea is not fermented, which slows the fermentation process down and thus you will end up with a tea that is both higher in sugar and lower in healing properties.

Do not worry about caffeine,which is transformed by the fermentation process and contributes to the amazing effects of this ancient elixir.

SUGAR :
Use light brown, brown, raw and 100% whole cane sugar.

Sugar is used by the yeasts during fermentation, and is broken down and transformed into acids, vitamins, minerals, enzymes and carbon dioxide. Sugar feeds the Kombucha itself. At the end of the fermentation period there should be almost no sugar at the Tea.I used to make mine with raw honey and it worked ok also, but as you know honey is antibacterial, so my assuption was that sugar would be better for keeping all necessary bacteria in the tea.

WATER :

If you smart enough – you will use the best water ever. It could be spring water , or crystalized  filtred water . Please, obtain from using tap water ever again! Your body is to holy to put trash into it.

SAFENESS :

Generaly,  the acidity of the fermented tea prevents the growth of unwanted contaminants. However, if you don’t bottled and stored it properly,there can be some contamination happen. It will have a common mold, green, brownish color on it.

Unfortunately if that happens to your elixir you have to  start over. Stories of toxic Aspergillus molds growing on Kombucha culture are common.

1. Clean Environment

* clean hands

* use food-grade glass containers only. Do not use  lead crystal, ceramic, plastic, painted, or metallic containers including stainless steel, as the acidic solution can leach by-products into the finished product.

2.  Proper Temperature

The ideal temperature is 74F-84F (23-29C). Temperatures under 60F (16C)can lead to contamination of the culture.

3. Low pH

* acidic conditions are favorable for the growth of the kombucha culture, and inhibit the growth of molds and bacteria.
* the pH of the Kombucha batch should be between 2.5 and 4.5. A pH ( less than 2.5 makes the drink too acidic for human consumption, while a pH greater than 4.5 increases the risk of contamination ).

Mushroom itself is protected against impurities and contaminants thanks to all its inherent healing properties which include: the organic acids, the low alcoholic content, carbonic acid, and the antibiotic products. However, please make sure you take the necessary steps to create the best conditions for the mushroom to thrive.

HOW TO START :

INGREDIENTS:

  • Kombucha culture
  • 70 – 100 g (2 1/2 – 3 oz ) of sugar per liter (about one quart) of water
  • 2 teaspoons black tea per liter (about one quart) of water

TOOLS AND MATERIALS:

  • One 2 – 4 liters (2 – 4 quarts) pot to boil water
  • One 2 – 4 liters (2 – 4 quarts) glass or porcelain jar
  • A linen/cotton handkerchief or a paper tissue
  • Bottles

HOW TO MAKE KOMBUCHA TEA :

If you work with mother Kombucha only start by making a batch that is two liters (2 quarts). You can make bigger batches after your Kombucha reproducts itself.

1. Make tea – use leaves or bags and soak them for 15 minutes in boiling water.

2. Strain off leaves  or remove the tea bags from the water.

3. Add about 70 – 100 g (2+ – 3 oz) of sugar per liter (quart) of water into the filtered infusion before it has cooled. Stir the tea so that the
sugar dissolves totally. 1 tablespoon of sugar is about 20 g (0.7 oz).

4. Allow the sugared tea to cool down to a temperature no higher than 68 – 70 degrees Fahrenheit (lukewarm). The culture dies when it has been placed in a hot nutrient solution.

5. When the tea has cooled to room temperature, pour the solution into a glass.

6. If you prepare your first Kombucha drink, add the liquid that Kombucha was living in. On all later batches, always keep enough Kombucha drink to add 10% of the quantity to your new batch as a “starter liquid”.

7. Place the live Kombucha culture in the liquid.

8. Cover the glass with cheesecloth, paper towel or similar light cloth to keep out fruit flies, dust, pollutants. Tie it down with a large rubber band. The cloth must allow  the air to circulate so the culture can breathe, but has to protect the Tea from contaminants or flies.

9. The fermentation should proceed for 8 – 12 days, depending on the temperature. The higher the room temperature, the faster the fermentation. The period of 8 – 12 days is given merely as a guide. Don’t move your Kombucha or lift the cloth. The ideal temperature is about 74 to – 80 degrees F (=23 – 27 degrees C). Light is not necessary. The culture also works in  darkness. During the process of fermentation the sugar is broken down by the yeast and converted into a gas (CO2) and various organic acids and other compounds. It is the combination of these processes which gives the Kombucha beverage its characteristic flavor. The infusion is at first sweet but this sweetness disappears as the sugar is broken down and it becomes sour. For a dry or slightly acid flavor it has to be continued longer.

10. When the tea has attained the right acid degree (pH 2,7 – 3,2), depending on individual taste, remove the culture with clean hands.

Clean the culture under cold or lukewarm water. Make a new place for your Kombucha Mushroom , brew  new tea into the jar and add the culture immediately. Pour the beverage into bottles, which should be filled to the brim. Keep about one tenth (10%) as starter for the next batch. Stopper the bottles securely. It is not necessary to strain the fermented beverage through a cloth. A certain amount of sediment is normal. It is due to the growth of yeasts, which produced the gas which aerates the beverage, which has positive impoct on our health.

11. Mature a drink  for a few days (at least 5 days). Bacteria stopped working because of  the bottling,but the yeast continues to work. If the bottles are securely stoppered, the gas produced by the yeast’s activities, is unable to escape. Kombucha will keep well for months. Do not worry  that the yeast won’t  stop the gas production at a certain point. Keep the beverage in a cool place.

12. When you start a new fermentation process, always add at least 10 % of the liquid from a cultivation which has already fermented to a new tea.
