YAMS AND ONIONS – SUNDAY SNACKS!

Yams are more natural and not hybridized as a regular potato.

Yam is:

  • Low in Saturated Fat, Sodium
  • High in Vitamin C, Fiber, Vitamin B6, Vitamin K, Potassium and Manganese

I have never had a chance to try them in Poland and I instantly fell in love with them in US.

As we know cooked starch becomes a sugar due to loosing it’s natural fiber.

But if you dehydrate them, you are keeping the fiber and nutrients.

Sunday – my snack day!

RECIPE :

  • 3 big yams cut into halves, so I can send them through food processor and have shapes like the ones below :

For Marinade :

  • olive oil
  • water from soaked dried tomato
  • 2 dry tomato
  • sea salt, pepper, rosemary, dill

And of course you can manipulate this recipe as much as you like !

Because I had some  marinade leftover, I cut the onion and bath her;-) in the remaining oil. Plus I added more pepper and some nutritional yeast.

Dehydrate for 8 hours.

TIP : To really nicely coat your yams with the marinade, you can use a square/rectangular dish and build up some layers. Glaze your marinade over each of your layer. You can the yams them sit for half an hour.
